The prize-winning pedigree Paradise Herd of Red Ruby Devons is managed for the maximum benefit of our wild flora & fauna. The herd is grass fed on the 500-acre Holt Lodge Farm promoting biodiversity at the highest level under the Government’s land management scheme, Higher Level Stewardship (HLS). Our HLS Scheme limits the use of fertiliser applications, it’s primary objective being traditional wildlife conservation and wildflower hay meadows.
Our x60 suckler cows accompanied by our two Pedigree bulls Colleton Umpire and Tilbrook Atlas together with followers freely roam during the summer months over our grasslands @ Holt Lodge Farm where calves are reared ‘at foot’ in the most natural way for 9 months or so.
At Holt Lodge Farm we manage our cattle to Organic farming standards (HLS disallows double funding preventing organic status) to maintain our animals health through the prevention of disease and minimising the use of veterinary medicines. The welfare of our animals is extremely important to us, and they will only travel to our local abattoir in Dorset.

The Red Ruby Devons lends itself to slow-growing maturing at 24 months, which is the antithesis of the industrial methods that grows cattle as fast as possible to speed up development maturing at 12 months.
The meat from our Red Ruby Devons is known for its flavour that comes from their grass-fed diet free of additives and bulking agents. The balance of fat and meat produces a wonderful, marbled beef known for being top-notch that is very often used in Fine Dining. When fed a grass-fed diet, Red Ruby Devon beef is healthier having one of the lowest amounts of fat per 3-ounce serving.
Where possible, our meat is sold fresh, however to manage our stock control and keep the integrity of our product, in some cases it is necessary to freeze our beef. Freezing does not compromise the taste and will lock in the taste and goodness and allows us to distribute all year round.
We believe in using every available part of the animal. We urge you to be adventurous and take advantage of some of the cheaper options, which can be just as delicious and are highly nutritious.

All the meat that we cut has been raised naturally, and lived the best possible life here at Holt Lodge Farm. Food miles to our local Dorset abattoir are kept to a minimum to reduce animal stress. We hang (naturally dry age) all of our grass fed beef for a minimum of 30 days, ensuring we respect the animal by maximising product quality.
We believe in using every available part of the animal, the tenderest cuts for frying and grilling and others that reward slow cooking by braising or in stews. We urge you to be adventurous and take advantage of some of the cheaper cuts as many of these deliver the richest and deepest flavours.
